3. Functional lipids
Functional oils are a class of oils with special physiological functions, including polyunsaturated fatty acids and phospholipids. The main polyunsaturated fatty acids are: linoleic acid, γ-linolenic acid, eicosapentaene (EPA) and docosahexaenoic acid (DHA). Phospholipids include lecithin, cephalin, inositol phospholipids, and serine phospholipids.
Essential fatty acids are an important part of phospholipids and are essential for brain development; they can reduce cholesterol levels, prevent arteriosclerosis, inhibit the formation of arterial thrombosis, reduce acute myocardial infarction, and prevent hypertension. Arachidonic acid is the precursor of prostaglandin (PG), which has physiological regulation function.
