Physical properties: Curcumin is an orange-yellow crystalline powder with a melting point of 183° and a slightly bitter taste. Insoluble in water, soluble in ethanol and propylene glycol, easily soluble in glacial acetic acid and alkali solution, it is reddish brown when alkaline, and yellow when neutral and acidic. It has strong stability to reducing agents, strong coloring (not to protein), and is not easy to fade after coloring, but it is sensitive to light, heat and iron ions, and has poor light resistance, heat resistance and iron ion resistance. Since there are two hydroxyl groups at both ends of the curcumin molecule, the conjugation effect of electron cloud deviation occurs under alkaline conditions, so when the pH is greater than 8, curcumin will turn from yellow to red. Modern chemistry takes advantage of this property as an acid-base indicator.

Water-soluble curcumin:

It is made of curcumin or turmeric extract through emulsification and refining. It is a red liquid and can be evenly dispersed in water. Widely used in flour products, pickled products, condiments, canned food, beverages, candy, cakes, tobacco, etc.

Oil-Soluble Curcumin:

It is made of curcumin or turmeric extract through emulsification and refining. It is a reddish-brown oily liquid and is easily soluble in oil. Widely used in bread, biscuits, egg products, pickled products, cakes, etc.

Main uses of curcumin:

1. Curcumin can be used as edible yellow pigment. Curcumin is usually used for the coloring of beverages, candies, cakes, sausage products, dishes, sauces, marinated products, canned food, as well as the coloring of cosmetics and pharmaceuticals. In my country, curcumin has been used in dried radish, curry powder, etc. for a long time; it can also be used in pickles, ham, sausages, and candied products of apples, pineapples, and chestnuts.

2. Curcumin can be used as an acid-base indicator. When the pH value is 7 or 8, it is displayed as yellow, and when the pH value is 9.2, it is displayed as reddish brown.

3. Curcumin is often used in the coloring of food, dishes, cakes, candies, canned beverages, cosmetics and medicines.
